seriously a sad day for me. my favorite go-to, healthy food was NOT at my local costco today. i LOVE this stuff. i eat it almost every day for lunch. really scrumptious. i found basically the same stuff at trader joe's last week, but it's more than twice as much... i could buy a package of six boxes at costco for eight bucks. ONE box at trader joe's is $2.79. yikes! at least i still have the option to enjoy it at all though, right?
what about you guys? what's your favorite easy, healthy food? i'm going to need some new ideas. :)

sad! i've never tried that, but it does look scrump. (that's my new word by the way, it's from Sienfeld, who knew i had it in me to quote that show?!)
anywho... my favorite go-to healthy food is actually a meal. it's baked salmon and broccoli. it's seriously the easiest dish in the world to make. throw a salmon fillet (from costco) in a bowl of water to defrost, get a corningware dish, drizzle some EVOO on the bottom, put salmon in there, sprinkle with salt, pepper, nutmeg and dill, add frozen broccoli florets, stick it in the over at 375 for 28 minutes, and voila, a delicious, super healthy meal in like 35 minutes.
true, it's not as fast as your soup, but you only have to think about it, then work for like 2 minutes, then just wait, and then enjoy!
Here's a great one, my favorite lunch soup-
Black Bean Soup
1 28oz can black beans
1 c salsa
1 1/2 c chicken or veggie broth
1 tsp cumin
Toss everything in the blender and zzz! Blend until smooth. Makes 2 servings.
